Ras Malai

The heavenly dessert! One simple tag line is enough to speak about the dish. Rasmalais were unknown until few years back when M introduced it to me. At first, it appeared to be a regular milk sweet but when M told that those are rasgullas dunked into creamy, rich, smooth, luscious Rabdi, I was sold.

Spring Onion Rice/Vengaya Thal Sadham

I often overbuy stuff when I just see them fresh or after a long time especially veggies. This happened a week ago when i went for a casual veggie pick up and saw these blooming strands of spring onion or scallions stand there fresh in the store.  I picked up 1 big bundle and ended up making all fried rice varieties the whole week. Still a lot was left over and i didn’t want to waste them hence they all found their way into this rice where they just shone beautifully. It’s a perfect lunch box dish that can be made in less than 15 minutes if the rice is ready.

Corn Pulao/Sweet Corn Pulav

Hi All, If I start with a ”Happy New Year” wish, that will sound a little crazy as already a month is over by now. So i hope that everyone is off with a good start this season. The past month was really hectic and some things at work didn’t really go down well and it was all over my head literally eating my head. It took some time for me to get out of that and now I am ok ! I guess!!! Now with a little bit of boost to the my morale, I m up with another favourite rice dish of mine!

Indian Gooseberry Rice / Nellikai Sadham/Ari Nellikai Sadham

Gooseberries are seasonal favourites of any Indian household. I have this tree at home that gives small variety gooseberries. They are quite sour and can’t be consumed raw as much as I would like.

Eggless Apple Cinnamon Spiced Cake

This cake is one such that screams” CHRISTMAS”. I don’t know from when, but always the fragrance or aroma of cinnamon in baked goods is Christmas to me. Maybe the warm earthy flavour of cinnamon wafting through bakery stuff reminds my inner soul of cold snowy winters dotted with greens and reds. This cake for sure will invite one for a second serve so do try it.

Egg Salan/Andey Ke Salan

When mum planned to cook Biryani, I couldn’t stop thinking about baingan ka salan which created a long lasting impression in me. But to my fate mum ran out of baingan and all i had were eggs. So her you go with my take on Andhra’s traditional recipe of salan. I wouldn’t call it an authentic recipe but be sure it’s a tantalizer!

Kohlapuri Egg Masala/Anda Rasa

If i say “I am a big fan of EGGS!” ,it would be an understatement. I am so in love with eggs and here is one of my treasured recipes, not just because it’s tasty, but also the fact that it can be made in a jiffy makes it top my list, as all know I m one helluva-lazy-bum.

Eggless Whole Wheat Dates & Coconut Cake

Christmas is around the corner, so what else can a blogging soul think off other than cakes and bakes. This is a simple, earthy cake with the flavours in their purest form. They are super healthy, utterly delicious and ridiculously simple to make. It’s a little on the denser side and is super moist and has a melt in mouth consistency. The shredded coconut casts a magic texture thatz totally drool worthy. Do try it.

Today I m with my first baked recipe, from an actual oven which i got months ago. I m no new to baking although i did take a break from it for quite some time because of all cross-country and cross-state shifts.
