Capsicum Rice/Kudaimilagai Sadham


Yet another lunch box recipe is what I am up to! What else can a working woman think of or come up with? I had all the colour capsicum leftovers after making a pizza (will post it soon) and my soul already leaned over the idea of making colourful rice for lunch box. It’s a simple, flavourful and delicious rice which can be made in a jiffy. Check it out!

Ingredients:
Cooked Basmati Rice – 1 cup
Capsicum- 2 cups, Julienned (I used red, yellow and Green ones)
Onion-1, julienned
Garlic-10 cloves, sliced
Red chilli powder-1 tsp
Garam Masala powder -1 tsp
Lemon Juice-1 tsp
Salt- as needed
Oil-2 tbsp
How It Happened:
1. In a pan, heat oil and add the onions and garlic and cook until they turn slightly brown.
2. Then add the chopped capsicum and cook until they wilt for around 3-5 minutes in medium flame.
3. Now add the chilli powder, salt and mix well then cook for 2 minutes until the raw smell goes off.

4. Add the cooked rice and mix slowly so that you don’t smash the rice grains.
5. Add the garam masala powder and mix well then simmer the flame and add the lemon juice and mix once.
6. Switch off the flame and let it rest for 10 minutes.
7. Serve warm with papad or raita.
Notes:
* You can use par boiled or short grain rice too but see to that they are cooked to perfection, that the cooked grains are intact.
* I like to keep the flavours simple hence i used garam masala but you can use a combination of spices and play around as you wish.

* Do not overcook the capsicum as its crunchiness adds a nice texture.
