Gothumai Adai/Gothumai Roti/Wheat Flour Veg Roti


This Gothumai adai is a tasty and healthy dish that will make you go for a second serving. Its a keeper at Amma’s home. M too likes it.I use the same ingredients, follow the same procedure but somehow I always feel that my Ma’s preparation is better than mine! So here is the recipe directly from Amma’s kitchen.
Ingredients:
Wheat flour/atta-1&1/2 cups
Carrot-1 medium, grated
Onion-4, medium, finely chopped
Ginger-1 inch piece, grated
Green chillies-4, finely chopped
Coconut-1/2 cup, chopped into thin slices
Drumstick leaves-1 cup, tightly packed
Salt-as needed
Water-as needed
Oil- as needed
How it Happened:
1. Wash all the veggies and cut as required and set aside.

2. Take a wide bowl/mixing bowl, add the wheat flour, salt and mix well.
3. Add all the cut veggies and mix them well.

4. Add water little by little and mix well to combine all the ingredients.

5. The dough should be a bit thinner/watery/sticky than chapathi dough.
6. Mix well and allow it to rest for 15 minutes and keep covered.

7. Heat a dosa tawa/ skillet, dip your hand in water and take a ball of the dough. Spread the dough on the tawa with your hand. Use water to avoid the dough from sticking to your hand while spreading.
8. Drizzle a tsp of oil around the edges of the roti. Let it cook for a minute. Turn to cook on the other side.

9. When both sides have turned golden brown and when they are well cooked remove them from the tawa.
10. Serve hot with coconut chutney or sugar.

Notes:
*The quantity of water required depends on the Atta so adjust accordingly.
*Cook the rotis in medium flame. It should be made a little thick so it will take some time to get cooked. So cook well.
*Instead of drumstick leaves, curry leaves can be used.

* Use different veggies like grated beetroot, grated radish or any other veggies of your choice.
