This is a simple stir fry that goes well with rice. Brinjal
is one of my favorite vegetable, but M doesn’t like it (thatz how the world
goes on, ain’t it?).So I try to incorporate it into sabzis in a way that he
doesn’t find it or else it will taste so good that he doesn’t mind about it!!!He
likes shimla mirch plus adding the spices, made him nod yes for the dish!!
Ingredients:
Capsicum-3 medium, cubed
Onion-1 large, cubed
Brinjal-4 large, cut to match the size of other vegetables.
Chili powder- 1 tsp
Salt-as needed
Garam masala- ½ tsp
Oil-1 tbsp
Mustard seeds- ½ tsp
Cumin seeds- ½ tsp
How it Happened:
1. Heat oil in a pan, add mustard and cumin seeds. When they
splutter add onion cubes.
2. When the onion becomes transparent, add the cut vegetables,
simmer the flame and cook covered for 7 minutes or until the veggies
are half-cooked.
3. Remove the lid, add salt, chili powder, mix well and cook
covered for another 5-7 minutes.
4. When the veggies are cooked, finally add garam masala mix
well, cook for a minute and switch off flame.
Notes:
*Make sure not to overcook the veggies, else they will turn
mushy.
*If u have maggi masala magic, skip garam masala and add a
packet of maggi masala. It will add a different taste. But make sure to adjust
the salt as the masala itself contains salt.
