Paneer Fried rice is an Indo-Chinese fusion dish thatz sure
is delectable. As I have said before anything with paneer is a hit but for M I have
to sneak it in so that he doesn’t have to chew it.
Yeah so I have added in
veggies and chopped the paneer small so they blend in well. For those who like
paneer you can skip veggies and add more paneer.
Ingredients:
Basmati rice-1 cup
Mixed Vegetables -3/4 cup (I used carrot, beans, capsicum
and cabbage)
Paneer-3/4 cup, small cubes
Garlic-5 flakes, chopped fine
Scallions/Spring onions-1 stalk, chopped ine
Olive oil-2 tbsp
Soy sauce-1 tsp
Pepper powder-1 tsp
Salt-as needed
How It Happened:
1. Wash and soak rice for half an hour. Drain the water.
Boil 2 litres of water in a wide pan, add salt and rice and cook until the rice
is long and soft. Drain the rice through a colander, fluff it with a fork and
set aside.
2. Heat 2 tsp of oil in a pan, add the paneer cubes and fry
until golden brown set aside in a kitchen towel.
3. In another pan, add the remaining oil, add the chopped
garlic and fry for a minute. Add the veggies and salt and cook in medium flame
for 7 minutes or until the veggies are soft and cooked.
4. Add in the fried paneer pieces, soy sauce and pepper
powder and stir in once.
5. Add the cooked rice and mix carefully without breaking
the grains.
6. Garnish with spring onions and serve hot.
Notes:
*Small paneer cubes blend in well with the rice.
*Take care not to overcook the rice.
* Cook veggies just enough so tat they maintain their
crunch.
* You can also add coarsely crumbled paneer along with veggies
and cook them. I fry them before adding to the veggies so they maintain the
shape and also have a unique texture.
* Olive oil kinda gives a subtle flavor which suits this
dish instead of those bold nutty flavors from sesame or groundnut oil.
