Egg noodles/Egg Hakka Noodles/Stir-Fried Egg noodles


Egg Hakka noodles is another much hyped Indo-Chinese dish that has emerged as a popular street food too! I have confessed my love for noodles enough number of times in this space and yet another confession is the love for eggs.
Eating egg twice a week being brought up in an orthodox vegetarian family who think eating egg is probably one of the sins is the least I can write about to confess the love. Now its another day to deal with those hunger pangs all alone when is M out! The dish came to my rescue at both ends, to eat and to post J

Ingredients:
Plain/Hakka Noodles-1 packet
Veggies-2 cups, julienned (I used carrots, capsicum and cabbage)
Eggs-2
Garlic-5 flakes, chopped
Soy sauce-1 tsp
Red chili sauce-1 tsp
Pepper powder-1 tsp
Scallions/spring onions-to garnish
Salt-as needed
Olive oil-2 tbsp
How It Happened:
1. Boil water with salt and add the noodles and cook for 2 minutes. When the noodles is cooked, drain the water completely strain it in a colander and run it through cold water drain excess water, sprinkle a tsp of oil mix and set aside.
2. Heat a tsp of oil in a pan, crack open 2 eggs sprinkle some salt and scramble the eggs. When the eggs are cooked, remove them to a plate and set aside.
3. In the same pan, add the remaining oil, and add the chopped garlic let it cook until it turns golden brown.

4. Add the veggies and cook for 5 minutes.
5. Add salt, pepper powder and red chili sauce and mix well. Let it cook for another 5 minutes.
6. Add the cooked noodles and mix well so that the sauces coat to the noodles.
7. Add the scrambled eggs and mix again. Let it cook for 2 minutes. Switch off the flame.
8. Add ajinomoto if you want give it a mix and garnish with scallions, serve hot.
Notes:
* Mushrooms would be great addition. They add a great flavor. Slice thin and add them. You can use onions, French beans etc.,
* Ajinomoto can be added for extra zing!
* I didn’t have scallions as you can clearly see I didn’t add any.

* I didn’t scramble the eggs much/too tiny specs as I want them to show up and I want to have a bite.  But you can scramble them tiny to blend them with the noodles.
