Vegetable Mayo Sichuan/Schezwan Sandwich

I love sandwiches and I make a lot of them. But I don’t get to click them so I don’t post them here. But today I had some time to click so here I am posting this recipe. Its super easy and tastes delicious.
Ingredients:
White/Brown bread-4 slices
Sichuan/schezwan paste-2 tsp
Mayonnaise-2 tbsp
Onion-1, finely chopped
Bell Pepper/Capsicum-1/2, finely chopped
Butter-1 tsp
Pepper powder-1/4 tsp
Salt-as needed
How it Happened:
1. Take the schezwan paste and mayo in a bowl. Mix them well and set aside.
2. Take chopped onion and capsicum, add salt and pepper to it, mix and set aside.
3. Take the bread slices slather it lavishly with the mayo and top it off with onions and capsicum.
4. Place one slice over the other and press it slightly.

5. Heat butter in a skillet, place the bread and let it roast for a minute in medium flame.
6. Then turn to the other side and cook until its golden and crisp.
7. When both the sides are toasted, transfer it to a plate cut diagonally and serve hot.
Notes:
* I used eggless mayo but regular mayo works fine as well.
* Any vegggies of your choice can be used.
* Any flavorings like oregano, rosemary etc can be used.
* You can use toaster/grill as well. The grill gives nice & typical char marks.

* It has to be served immediately else the mayo turns the sandwich soggy.
